
Ingredients for 4 Servings:
- 10 pineapple rings
- 2 salmon filets
- one pack of minute ready rice
- two avocados
- carton of pre-sliced mushrooms
- bag of spinach
- salt
- black pepper
- 3 tbsp. melted butter
- 3 tbsp. sweet chili sauce
- 2 tbsp. toasted sesame oil
- lime juice

How to make:
- Pre-heat oven to 350 degrees. Line a large rimmed baking sheet with foil.
- Season both sides of the salmon with salt and pepper.
- In a small bowl whisk together butter, chili sauce, sesame oil, lime juice, and any other seasoning to taste. Brush all over salmon filet.
- Place sliced pineapples on top of salmon so the flavor soaks into the salmon while baking.
- Place in oven and bake until cooked. Mine took 45 minutes to fully cook.
- While baking put butter and oil in stove pan with heat on high. Cook mushrooms first until light brown and pour spinach in pan.
- Season with salt, pepper, and lime juice and cook until done.
- Cook ready rice and when plating add avocados to plate.
