Chicken Burrito Bowls

Ingredients for 4 Servings:

  • 3 boneless, skinless chicken breasts
  • 3 bell peppers, any color, sliced
  • 1 large red onion, sliced
  • 2 tablespoons of olive oil
  • 1 packet of taco seasoning
  • salt and pepper, to taste
  • 1 jar of salsa
  • 3 cups of brown rice, cooked
  • 1 can of black beans, drained and rinsed
  • 1 can of corn
  • 1 cup of shredded cheddar cheese
  • 1 avocado, sliced into wedges

How to Make:

  1. Preheat oven to 400 degrees F
  2. Line baking sheet with foil
  3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil
  4. sprinkle the taco seasoning evenly over both sides of the chicken breasts, onions, and peppers
  5. Sprinkle salt, pepper, and any other preferred seasonings on everything
  6. Top each chicken breast with a generous amount of salsa
  7. Bake in the preheated oven for 25 minutes
  8. Add base of cooked rice on to bowls/plates
  9. Top rice with beans, corn, cheese, cooked peppers, onions and chicken.
  10. Get fancy by adding slices of avocado or lime and cilantro
