Ingredients for 4 Servings:
- 3 boneless, skinless chicken breasts
- 3 bell peppers, any color, sliced
- 1 large red onion, sliced
- 2 tablespoons of olive oil
- 1 packet of taco seasoning
- salt and pepper, to taste
- 1 jar of salsa
- 3 cups of brown rice, cooked
- 1 can of black beans, drained and rinsed
- 1 can of corn
- 1 cup of shredded cheddar cheese
- 1 avocado, sliced into wedges
How to Make:
- Preheat oven to 400 degrees F
- Line baking sheet with foil
- Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil
- sprinkle the taco seasoning evenly over both sides of the chicken breasts, onions, and peppers
- Sprinkle salt, pepper, and any other preferred seasonings on everything
- Top each chicken breast with a generous amount of salsa
- Bake in the preheated oven for 25 minutes
- Add base of cooked rice on to bowls/plates
- Top rice with beans, corn, cheese, cooked peppers, onions and chicken.
- Get fancy by adding slices of avocado or lime and cilantro
